Lipid residues in ancient pastoralist pottery from Kazakhstan reveal regional differences in cooking practices

The Bronze Age—Iron Age transition in Central Asia (ca. 800 BCE) was a period of significant cultural change that heavily influenced by greater population interaction and mobility. Indeed, scholars have increasingly emphasized the role “food globalization prehistory” has played defining this period. In mountain foothills Kazakhstan, culinary traditions from across Eurasia were combined through use Southwest Asian wheat, barley, livestock (cattle, sheep, goats) with East foxtail broomcorn millets. development food cultures during been investigated archaeobotanical isotopic analysis, yet lipid residues pottery, which directly represent practices, not adequately examined. study, residue analysis conducted on 72 pottery sherds, excavated three burial mounds one non-burial, ritual site located dating to ca. 700–200 BCE. A particularly informative observation frequency miliacin, biomarker millet, detected corresponded well previously published regional differences observed carbon isotope ratios human remains indicate consumption C 4 plants. This study also demonstrates continuity dairying into Iron Age. Finally, sheds new light diversity mortuary practices region, uniform either space or time.
